Mango salsa: a fruity and versatile salsa

Who says salsa has to be limited to tomatoes? Chef Johnny Koidis from Johnny Bistro in Markham uses mango salsa to transform a grilled chicken breast or salmon fillet into a colourful and delicious entrée. For dip lovers, this tropical salsa is perfect loaded on tortilla chips.
Preparation Time: 10-5 minutes
Ingredients:
3 diced mangos
2 diced Roma tomatoes
pinch salt
pinch pepper
3 limes
2 tbsp. peach or apricot jam
¼ chopped red onion
½ cup cilantro
Instructions:
- Holding the mango upright, slice of the larger flat sides and then peel off the skin. Dice the mango flesh into cubes and put in a bowl.
- Dice tomatoes and red onions. Chop cilantro and add to the mango salsa mixture.
- Add salt and pepper to taste and squeeze juice of three limes into salsa.
- Add jam and stir.
